Fatih Oz graduated from Food Engineering Department at Ataturk University (Erzurum, Turkey) in 1998. After he received his Ph.D. degree in 2006, he served as a postdoctoral fellow at The Pennsylvania State University, USA. He has served as a Professor at Ataturk University since 2017.
His main research interests are food chemistry, meat science and technology, food science, and food mutagens and carcinogens. He has published more than 100 international publications, seven book chapters and presented more than 200 presentations in various international and national conferences.
He is involved in teaching several undergraduate and graduate courses at Ataturk University including seafood processing technology, catering, food processing and analysis techniques, reaction kinetics, meat consumption and health, mutagenic and carcinogenic compounds in foods.
Dr. Oz has been invited to serve on the Editorial Board of several journals. In addition, he is also serving as reviewer to several Journals in Food Science.
